Why raw garlic is a problem in the first place
For people who follow a low-FODMAP diet, raw garlic is one of the hardest foods there is. It's among the most concentrated sources of fructans — a fermentable carbohydrate that triggers symptoms in sensitive guts — and the threshold is famously low. Specialist sources citing Monash University put it at around half a clove being enough to cause problems for some people.
So the hope behind "aged is gentler" is understandable. If ageing breaks those fructans down, surely black garlic is the safe version? Here's the catch.
The chemistry doesn't remove the problem — it moves it
Ageing does break down the long-chain fructans. But it doesn't make the carbohydrate vanish. It converts it. Over weeks of low heat, stored carbohydrate is broken into simpler free sugars — which is exactly why black garlic turns sweet, dark and tangy, with its acidity rising sharply as it ages.
The trouble is that one of those free sugars is fructose, and excess fructose is itself a FODMAP. So what you lose in long-chain fructans, you partly gain back as free fructose. The problem isn't eliminated. It's reshaped.
What the testing actually shows
This is borne out where it counts. FODMAP specialists reporting Monash's lab testing classify black garlic as high FODMAP — not low, not "tolerable," high. The intuitive story and the measured result point in opposite directions, and the measurement wins.
That matters because the market is genuinely misinformed here. Several gut-health pages state the opposite, and someone managing real symptoms could act on it. The honest correction is simple: ageing changes garlic's carbohydrate profile, but it does not turn a high-FODMAP food into a low-FODMAP one.
The nuance that actually helps
Two things are true and worth holding onto.
First, FODMAP tolerance is about quantity, not a yes/no verdict. The Monash system is built on serving sizes — the same food can sit under a threshold in a small amount and over it in a large one. "High FODMAP" describes the food, not a rule about every mouthful.
Second, tolerance is individual. Monash's own position is that people differ, sometimes a lot. Two people can eat the same thing and only one reacts.
Which is why a low-FODMAP diet is something to do properly, with a registered dietitian — not assembled from blog posts, ours included. The diet is a structured elimination-and-reintroduction process, and getting it wrong tends to mean cutting out more food than you need to.
